A hedgerow twist on the Tom Collins. Red Bullace plum liqueur brings wild plum character and depth, lifted by zesty lemon and lengthened with soda for a clean, herbal finish.

Ingredients

• 50ml Red Bullace plum liqueur
• 20ml lemon juice
• Soda water

Method

• Fill a highball glass with ice
• Add Red Bullace plum liqueur and fresh lemon juice
• Top with soda water
• Stir gently
• Garnish with a sprig of thyme and a cherry
