Bullace Liqueurs: A Taste of Ancient British Orchards

The Bullace is one of the most intriguing fruits of the British countryside. A close relative of the Damson, it is one of the oldest domesticated fruits in the UK, prized for its robust nature and deep, varied flavour. At Aedda’s Farm Distillery, we are passionate about championing these heritage plum liqueurs, cultivating both the Golden Bullace and the Red Bullace in our Buckinghamshire orchards.

Our Bullace Liqueurs are often the first introduction many people have to this remarkable fruit. They are crafted through our slow maceration process in Adstock, where the spirit base, infused with lemon verbena and cardamon, draws out the rich, honeyed sweetness of the Golden variety and the deep, tart complexity of the Red. This dedication to single-variety excellence firmly establishes our place in the British Craft Spirits market.

H3: Golden Bullace vs. Red Bullace: Two Distinct Liqueurs

While both are technically Bullace plums, the two varieties yield dramatically different liqueurs, suitable for different occasions.

Liqueur Variety Plum Type Colour & Aroma Flavour Profile

Golden Bullace

Yellow/Green Bullace

Clear, amber-golden colour. Aroma of honey and ripe apricots.

Smooth, rich sweetness with a caramel finish. Ideal for simple mixing.

Red Bullace

Dark Red/Purple Bullace

Deep, ruby colour. Earthy aroma with notes of stone fruit skin.

Complex, slightly acidic, and less sweet than the Golden. Great for sipping neat.

The Golden Bullace Liqueur is one of our most popular liqueurs, celebrated for its approachable sweetness and versatility in Liqueur Highballs. The Red Bullace Liqueur appeals to those seeking a sophisticated, earthy finish.

Why Heritage Plums Matter to British Liqueurs

Our decision to focus on heritage fruit like the Bullace, grown with regenerative farming practices, is key to our brand’s authenticity. This commitment ensures we preserve unique flavours that are genuinely reflective of the local soil and climate of Buckinghamshire. Unlike many fruit liqueurs that rely on generic fruit concentrates, our use of traceable, high-quality plums delivers a superior flavour density and complexity.

This focus on provenance and singular quality is why our Bullace Liqueurs are becoming recognised as some of the best British Liqueurs available. We control every part of the process, from planting the tree to bottling the finished spirit.

FAQs

Are Bullace plums found naturally in the wild?

Yes, the Bullace is considered a wild plum. Historically, it was cultivated across the British Isles. Our passion is to bring these ancient, complex flavours back to the modern British Liqueurs market through careful cultivation in Buckinghamshire.

How does the flavour of the Bullace compare to a traditional Damson Liqueur

The Bullace Liqueurs are generally sweeter and fruitier than the Damson. While the Damson has a pronounced tartness, the Golden Bullace is honeyed and the Red Bullace is earthy, offering a rounder, softer finish overall.

Is the Bullace Liqueur suitable for baking or desserts

The intense, sweet flavour of the Golden Bullace is perfect for cooking. It can be used to drizzle over fruit salads, added to a sponge pudding mix, or used to soak cake layers to add a hint of authentic British fruit flavour.
