New Make - Brewer’s Series - English Ale
This release explores traditional English ale yeast in whisky fermentation. Sourced from a local brewery and pitched as the primary strain, the yeast was allowed to develop classic orchard fruit esters before a neutral distillers’ yeast ensured full attenuation.
The result is a fruit-forward English new make spirit with depth and balance - ripe pear, gentle stone fruit and warm malt sweetness carried through a long, rounded finish.
A celebration of shared brewing and distilling heritage, crafted on our Buckinghamshire farm and bottled at 60% ABV.

How it’s made
Every spirit we produce at Aedda’s Farm Distillery begins with a respect for raw ingredients and a belief that flavour is shaped long before it reaches the cask. From carefully selected British malt and considered yeast strains, through long, characterful fermentations and deliberate cut points on the still, each decision is made to build depth, texture and clarity of flavour.
