New Make - Farm Series - Wild Apple
Wild yeast was collected from apples grown in our orchard and carefully cultivated before fermentation. A controlled co-pitch ensured safe completion while allowing the orchard microflora to shape the spirit’s aromatic profile.
The result is a new make that carries a subtle echo of the fruit from which its yeast was harvested - delicate, slightly floral, and softly lactic in texture.
This release is a true expression of place.

How it’s made
Every spirit we produce at Aedda’s Farm Distillery begins with a respect for raw ingredients and a belief that flavour is shaped long before it reaches the cask. From carefully selected British malt and considered yeast strains, through long, characterful fermentations and deliberate cut points on the still, each decision is made to build depth, texture and clarity of flavour.
