New Make - Brewer’s Series - Saison
Using saison yeast known for its expressive phenolics and dry fermentation character, this release brings spice and structure to new make spirit.
The fermentation was allowed to run warm and extended, encouraging peppery complexity and subtle citrus esters before careful distillation preserved its aromatic precision.
The resulting spirit is bright, lightly floral and delicately spiced - a distinctive interpretation of farmhouse fermentation in English whisky production.
Bottled at filling strength, 60% ABV.

How it’s made
Every spirit we produce at Aedda’s Farm Distillery begins with a respect for raw ingredients and a belief that flavour is shaped long before it reaches the cask. From carefully selected British malt and considered yeast strains, through long, characterful fermentations and deliberate cut points on the still, each decision is made to build depth, texture and clarity of flavour.
