In an industry where marketing claims often obscure how products are actually made, we prefer absolute clarity. Here are the five principles that define our craft distillery in Buckinghamshire, and why doing things the hard way makes all the difference in your glass.
1. We Don’t Source Grain from Distant Brokers
Everything we distill starts right here on our farm in Adstock, Buckinghamshire. We sow, manage, and harvest our own grain for our single malt English whisky. Meanwhile, our farm orchards, including our growing apple and plum trees, are being cultivated to supply our upcoming single estate brandy and plum liqueurs directly from our own soil. Until those trees reach full yield, we partner exclusively with trusted British growers who share our exact standards for responsible, sustainable agriculture.
2. We Don’t Rush Spirits Into Bottles
Quality takes time, patience, and precise craft. We focus on mastering one process before moving to the next, refusing to cut corners to hit artificial release deadlines.
Our award-winning plum liqueurs earned global recognition simply because we gave them the time and attention required to develop true depth of flavour. We bring this exact unhurried ethos to our upcoming batch releases of single estate brandy and single malt English whisky.
3. We Don’t Separate Farming from Distilling
Farming and distilling are not two distinct operations at Aedda’s Farm Distillery, they are two sides of the same coin. How we care for our land, rotate our crops, and rest our soil directly dictates the character of the spirit entering our copper stills.
By embedding regenerative farming practices into our crop management, better soil health directly translates to superior flavour profiles in our final farm-to-glass spirits.
4. We Don’t Run on a Rigid Production Calendar
Nature doesn't operate on a corporate timeline, and neither do we. Rather than forcing distillation schedules, we work strictly with what is ready when it reaches peak harvest condition.
Every batch we bottle reflects a specific moment in time, capturing the distinct terroir, weather, and character of this harvest and this Buckinghamshire soil.
